Jam Thumbprint Cookies


This Monday I moved into a new apartment!  It's a great little place in the Village, and while the apartment is tiny cozy, the kitchen is amazing and disproportionately large compared to the unit.  I couldn't wait to cook in it, so my first night in the apartment, I baked some cookies for the staff in my building.  I have much more counter space than I did in my old place and decided to use it!  I made thumbprint cookies, which are a bit difficult to make in cramped quarters as they require you to roll out the dough.  I used Ina Garten's recipe and, as always, she did not disappoint.  You can find the recipe here.

After rolling the dough out, you wrap it in plastic and refrigerate it for 30 minutes. 

Then roll it into 1 1/4 inch balls, dip them in egg wash and cover in coconut flakes. 

Use your thumb to make indentations in the cookies for the jam.  Hence, thumbprint!

25 minutes later you'll have delicious cookies!
